V - Veggie-Filled Croissants

Best Adult Lunch Ever!

Veggie-Filled Croissants

Ingredients:

4 large croissants
1 ½ C shredded Monterey Jack cheese (6 oz)
1 small zucchini, chopped into bite-size (about ½ C)
1 small tomato, chopped into bite-size (about ½ C)
1 small onion, chopped (about ¼ C)
1 can (4 oz) chopped green chilies, drained

Heat oven to 325 degrees. Cut along outside curve of each croissant to within 1 in of each end and ¼” of inside curve to form a pocket. Mix remaining ingredients; spoon into croissants. Heat on ungreased cookie sheet until cheese is melted, about 15 min.

Serving: 4 sandwiches (360 calories per sandwich)

H - Ham Rolls and Hot Dogs N Beans

Today for lunch I spread onion/chive cream cheese on a flour tortilla and added lettuce and thinly sliced deli ham for a delicious roll-up. This isn't original, probably something I've seen along the way.

It lacked something so I added a dill pickle for an extra tang/crunch. So yummy!

Then I made this crock pot meal for an easy dinner and served it with cornbread muffins.

Hot Dogs ‘N’ Beans

Ingredients:

3 cans (two 28 oz., one 16 oz.) pork and beans
1 pkg. (1 lb) hot dogs, halved lengthwise and cut into 1-inch pieces
1 large onion, chopped
½ C packed brown sugar
3 T prepared mustard
4 bacon strips, cooked and crumbled

In a slow cooker, combine all ingredients; mix well. Cover and cook on low for 7-8 hours.

Pizza Burgers

Tuesday night I had a work meeting, but my family wasn't going to be home in time to eat dinner all together.  I put together this "pizza-joe" and left it on the stove top covered. (There was about a 10 minute disparity between my departure and their arrival.)  I wrote out the final instructions and the gang finished up the recipe with no problem.  They even snapped a picture for me to share!  It was delicious!  Check out the Taste of Home link below for nutritional and freezer info, plus, other great recipes.

Open-faced Pizza Burgers

Ingredients:

1-1/2 pounds ground beef
1/4 cup chopped onion
1 can (15 ounces) pizza sauce
1 can (4 ounces) mushroom stems and pieces, drained
1 tablespoon sugar
1/2 teaspoon dried oregano
6 hamburger buns, split and toasted
1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese

In a large skillet, cook beef and onion over medium heat until the meat is no longer pink; drain. Stir in the pizza sauce, mushrooms, sugar and oregano; mix well. Spoon onto buns; sprinkle with mozzarella cheese.

Place on ungreased baking sheets. Broil 4 in. from the heat for 2 minutes or until cheese is melted.

To freeze for quick lunches later, place the split and toasted buns on a baking sheet. Spoon the meat mixture onto buns; freeze for 1 hour. Transfer to heavy-duty resealable plastic bags or airtight containers.

Pizza Roll-ups!

For a quick & easy lunch or snack, try:

Pizza Roll-Ups

Ingredients:

½ lb ground beef
1 can (8 oz) tomato sauce
½ C shredded mozzarella cheese
½ t dried oregano
2 tubes (8 oz each) refrigerated crescent rolls

In a skillet, cook beef over med. heat until no longer pink; drain. Remove from the heat. Add tomato sauce, mozzarella cheese and oregano; mix well. Separate crescent dough into eight rectangles, pinching seams together. Place about 3 tablespoons of meat mixture along one long side of each rectangle. Roll up, jelly-roll style, starting with a long side. Cut each roll into three pieces. Place, seam side down, 2” apart on greased baking sheets. Bake at 375 degrees for 15 min or until golden brown.

Biscuit Barbecups

These make a great winter lunch when the kids are home!

Biscuit Barbecups

Ingredients:
1 lb. ground beef
½ C prepared barbecue sauce
1 T. minced onion or ¼ C chopped onion
1-2 T. brown sugar
1 (10 oz) can Hungry Jack Flaky Biscuits
2 oz. (1/2 C) shredded cheddar or American cheese

Heat oven to 400 degrees. Grease 10 muffin cups. Brown ground beef in large skillet; drain. Stir in barbecue sauce, onion and brown sugar. Cook 1 minute to blend flavors, stirring constantly. Separate dough into 10 biscuits. Place 1 biscuit in each greased muffin cup; firmly press in bottom and up sides, forming ¼ in. rim. Spoon about ¼ C of meat mixture into each biscuit-lined cup. Sprinkle each with cheese. Bake 400 degrees for 10-12 minutes or until edges of biscuits are golden brown. Cool 1 minute; remove from pan.

Hint: Tip: To make ahead, prepare as directed above. Cover; refrigerate for up to 2 hours. Bake as directed above or just cook burger up ahead of time & use later.

Cheese & Hot Dog Crescents

These are by far one of my kids favorite lunches. Have you ever made them? Pillsbury is genius mixing crescents with hot dogs and cheese - it's a hit at my house! To see a wonderful picture of the final product click on the Pillsbury link below.

Cheese & Hot Dog Crescents

Ingredients:

8 hot dogs
4 slices American cheese, cut into 6 strips each
1 (8 oz) can Pillsbury Crescents

Heat oven to 375 degrees. Slit hot dogs to within ½” of ends; insert 3 strips cheese in each slit. Separate dough into 8 triangles; wrap dough over hot dog, keeping cheese facing up. Place on ungreased cookie sheet, cheese side up. Bake at 375 degrees for 12-15 min. or until golden brown.

Biscuit Cheese Pizza

When you need a quick, kid-friendly lunch, give this recipe a try. We made these while the cousin's were visiting last week and everyone heartily enjoyed them. I think the recipe below is one I've copied from the Sunday coupons section. It's the same recipe as the link above with just a little more detail. If you want A LOT of great pizza ideas, check out Pillsbury's site...so many recipes to choose. Yum!

Grands Pepperoni Pizzas

Ingredients:
1 can (16.3 oz.) Pillsbury Grands (any variety)
1 C pizza sauce
2 C ( 8 oz.) mozzarella cheese
½ pkg (3.5 oz) sliced pepperoni

Heat oven to 375 degrees. Press each biscuit into 6 in. round. Place on 2 large or 3 small greased cookie sheets. Top each biscuit with pizza sauce, cheese and pepperoni. Bake 10-15 minutes or until bottoms are deep golden brown and cheese is bubbly.

Veggie Lover’s Pizza: Omit pepperoni. Cook chopped onions, sliced mushrooms and sliced red bell pepper in 1 T olive oil about 5 minutes or until limp. Top each biscuit with pizza sauce, cheese and veggie mixture.

Tropical Pizzas: Omit pizza sauce and pepperoni; increase cheese to 2 cups. Top each biscuit with cheese, canned pineapple tidbits, diced green bell pepper and sliced Canadian bacon or ham.

Yield: 8 pizzas.
