L - Lasagna Soup

We love this yummy soup!  It is SO EASY to make.

Lasagna Soup 

Ingredients:

 1 lb. ground beef
½ C chopped onion
1 pkg (7 ¾ oz) lasagna dinner mix (Hamburger Helper)
5 C water
1 can (14 ½ oz) diced tomatoes, undrained
1 can (7 oz) whole kernel corn, undrained
2 T grated parmesan cheese
1 small zucchini, chopped

In a dutch oven or soup kettle, cook beef and onion over med heat until meat is no longer pink; drain. Add contents of lasagna dinner sauce mix, water, tomatoes, corn and parmesan cheese; bring to a boil. Reduce heat; cover and simmer for 10 min, stirring occasionally. Add the lasagna noodles and zucchini. Cover and simmer for 10 min or until noodles are tender. Serve immediately.

You can add a little parmesan on top of each serving, if you'd like. It makes great leftovers!

Seafood Chowder

Don't know about you, but it's cold where we live! Brrr... This soup is a tummy-warmer and delicious too!

Chunky Seafood Chowder

Ingredients:

1 med. onion, chopped
2 T butter or margarine
2 pints half-and-half cream
1 can (10 ¾ oz) cond New England clam chowder
3 med. potatoes, peeled and cubed
1 t salt
¼ t white pepper
1 pkg (8 oz) imitation crabmeat, flaked

In a saucepan, sauté onion in butter until tender. Add cream and canned chowder; bring to a boil. Stir in the potatoes, salt and pepper. Reduce heat; simmer, uncovered, for 15-20 min or until the potatoes are tender. Stir in crab and heat through.

Serving: 8 (2 qts.)

Ground Beef Stew

Years ago my husband asked me to stop making beef stew because I overcooked the meat every time. (Such talent I had!) Because of that, I looked for a beef stew that I didn't have to precook the meat. I'm sure I'll post that recipe sometime this winter, but until then here's a stew that you can throw into the crockpot. It's low-cost, family-friendly and hearty! I serve it with biscuits just like my Momma used to do.

Ground Beef Stew

Ingredients:

1 lb. ground beef
6 medium potatoes, peeled and cubed
1 pkg. (16 oz) baby carrots
3 C water
2 T. dry onion soup mix
1 garlic clove, minced
1 t. Italian seasoning
1 to 1 ½ t. salt
¼ t. garlic powder
¼ t. pepper
1 can (10 ¾ oz) condensed tomato soup, undiluted
1 can (6 oz) Italian tomato paste

In a skillet, cook beef over medium heat until no longer pink; drain. In a slow cooker, combine the next nine ingredients. Stir in the beef. Cover and cook on high for 4-5 hours. Stir in soup and tomato paste; cover and cook for 1 hour or until heated through.

Hint: I'm sure this would freeze well, although it never lasts around my house long enough to find out.

Homemade Chicken Soup

We've had some sniffles at our house lately and when we're feeling run-down, I like to break out the Chicken Soup recipe. I start feeling better as soon as I pull out the stock pot.

Homemade Chicken Soup

Ingredients:

Whole fryer chicken (or any amount you desire)
1 med onion, cut very fine
3-4 carrots, cut very fine
pkg of egg noodles
2 chicken bouillons(to enhance flavor)
salt and pepper

Clean out chicken, cut up and boil in water in a stock pot. Skim fat off the top. (Cook until looks done – about 30-40 min) Remove chicken, debone, remove skin, and cut into bite-size pieces. Return chicken to stock pot, add onions, carrots, bouillons, salt and pepper. Simmer until carrot are tender, about 10 min. Then add egg noodles and boil until done, about 8-9 min.

Serving: 16 C liquid, 10 people

Cheesy Wild Rice Soup

Fast...Easy...Yummy!

Cheesy Wild Rice Soup

Ingredients:
1 pkg (6 oz) quick-cook long grain & wild rice mix (I use Uncle Ben's)
4 C milk
1 can (10 ¾ oz) condensed cream of potato soup
8 oz. process American cheese, cubed
½ lb sliced bacon, cooked and crumbled

In a large saucepan, prepare rice according to pkg directions. Stir in milk, soup and cheese; mix well. Cook and stir until cheese is melted. Garnish with bacon.

Serving: 6-8
