Stir-Fried Zucchini

Stir-Fried Zucchini


2 lbs. zucchini, sliced
2 garlic cloves, minced (we double!)
¼ C olive or vegetable oil
1 t. salt
½ t. Italian seasoning
¼ t. pepper

In a large skillet, sauté the zucchini and garlic in oil until zucchini is crisp-tender, about 5 minutes. Sprinkle with seasonings. Serve immediately.
