D - Double-Quick Dinner Rolls

Before I had a bread machine I would use this recipe quite often. I could pop out dinner rolls in a little over an hour and very often that is all the think-ahead time I gave myself.  Now I can bake bread in the machine and have it on hand so I haven't made these rolls recently, but they were delicious. Great recipe in a pinch!

Double-Quick Dinner Rolls

Ingredients:

1 C warm water (110-115 degrees)
1 pkg active dry yeast
2 T sugar
2 ¼ C flour
1 t. salt
1 egg
2 T shortening

In mixing bowl, dissolve yeast in water. Stir in sugar, half of flour, and salt. Beat with wooden spoon until smooth. Add egg and shortening. Beat in rest of flour until smooth. Scrape down sides of bowl and cover with a cloth. Let rise in warm place until double (@ 30 min). Grease 12 large muffin cups. Stir down dough. Fill cups half full. Let rise until double (20-30 min). Bake at 400 degrees for 15-20 min.

Serving: 12 rolls

you know i haven't used my bread machine in years, as a matter of fact i don't even know where it is--but you have inspired me to find it!

I love me some bread! I will have to compare this to the No Wait Rolls recipe I have and see if it is different.

The recipe sounds easy enough. I've never been too good at making homemade rolls or bread. It was nice when we had a bread machine.
