E - Easy Strawberry Bread

This is a deliciously moist fruit bread that has a pretty pink/red color.  I have made it for brunches on many occasions. While I was looking through my recipes for ones that began with "E" I ran across this and I'm pretty sure I won't be able to stop thinking about it until I make some. So yummy!

Easy Strawberry Bread

Ingredients:

3 C flour
1 t. baking soda
1 t. salt
3 t. cinnamon
2 C sugar
4 eggs, well beaten
1 ¼ C cooking oil
2 (10 oz) boxes sliced strawberries defrosted w/ juice
1 C chopped nuts, if desired

Sift flour, baking soda, salt and cinnamon together; stir in sugar. Make a well in the center of the mixture and add eggs, cooking oil, strawberries and nuts. Blend all together and pour into 2 greased and floured bread pans. Bake at 350 degrees for 60-65 min. For four small loaves bake for 38-42 min.

Serving: 2 loaves

Hey there, Found you via the A to Z challenge. Was looking for something to bring to Mom's for Easter. Think I will try making the Easy Strawberry Bread. Thanks for sharing. Also, I used to make the Cheesburger pie all the time but haven't made it in a while. Now I have that on my mind for dinner tonite. ;)
